Hispanic naming conventions

I've run into a bunch of folks with Hispanic (primarily but not exclusively Mexican) heritage with LOTS of names...two or three given names and a hyphenated (or sometimes two non-hyphenated) last name(s). I assumed the last names represent the maternal and fraternal family names, but is there any rhyme or reason to it?
To make things even more confusing to this caveman, it seems like many of them often adopt one or the other first name and one or the other last name as their everyday common name. For instance (in my somewhat limited experience), a Juan Marco Hernandez Ramirez might go by Juan Hernandez, Marco Hernandez, Juan Ramirez, or Marco Ramirez.
Is it all just personal preference, or is there a naming convention that explains all this?
